INGREDIENTS (serves 1)

1-2 slices of rye bread or sourdough

12 raw king prawns, shelled

A handful of edamame beans

A handful of spinach leaves, washed

1 clove of garlic

1 tsp olive oil

Lemon juice

Salt, pepper

chilli flakes (optional)


In a frying pan het the oil, add prawns, edamame beans, garlic, seasoning and a drizzle of lemon juice. Cook for 5 minutes until the draws turn pink.

Toast the bread until crips.

Layer spinach on top of your toasted bread and then add prawns and beans on top.


  1. Choose a good quality bread, like rye or sourdough without any additives.
  2. Opt for good quality prawns.
  3. You could pre-make the prawn and edamame bean mix and keep it in a jar in the fridge. Use as and when you need to.
