Asparagus & Parmesan tart
INGREDIENTS (to make 6 servings as starters)
1 x 320g ready-rolled puff pastry sheet (taken out of the fridge at least half hour before using)
200g fine asparagus
A handful of grated parmesan
Freshly ground black pepper
1 egg, mixed well
Preheat the oven to 180 degree C.
Unroll puff pastry sheet on a large baking tray.
Score a line all the way around your puff pastry sheet, about 1.5cm from the outer edge.
Place all your asparagus spears in neat lines on top of the sheet, keeping inside the lines.
Paste the asparagus and puff pastry with the egg.
Sprinkle over parmesan and season.
Bake for ca. 20 minutes or until the puff pastry is nice and golden brown.
- A bit of goats cheese is lovely too, maybe walnuts too!?
- Add chilli flakes if you feel like adding spice.
- Serve with a crisp green salad.
